The Cherry Cricket – Denver, Colorado…

Since we are talking about amazing food in Denver, I absolutely must mention The Cherry Cricket. I absolutely LOVE a good hamburger, and the Cherry Cricket? Some of the best burgers I’ve ever tasted! I make a point to try to go there every time I visit Denver. My friend & business coach Jeff Jochum tipped me off to them in 2010 on my first trip there for a workshop. I liked them so much, I went back the next day for another round!

Last October I went with Mike to Denver for one of his work business trips; while we were there I took him on this gorgeous fall day for his first Cherry Cricket experience. I’m sure it won’t be the last time we visit there!

I don’t know how they do it – words can’t even adequately explain the magic – but their burger and fries are phenomenal! The sweet potato fries were pretty stellar as well.

Bacon. IN the Pancakes. Brilliant!

Bacon. In the pancakes. GENIUS!

When I went to Denver last fall, Brooke Summer (a Denver boudoir photographer) and I dined at all sorts of fabulous places. One of my personal favorites? The Original Pancake House. We went to the one in the Denver Tech Center, and it was like a little slice of heaven.

Admittedly, I hadn’t had pancakes at that point in over 10 months since going gluten free. I love pancakes, but I chose when I first cut out gluten to not find “substitutes” for it because I also eat a very low-carb diet as well. Pancakes? Not going to happen. But that one day, I gave in. I ordered gluten free BACON pancakes. Yes, bacon IN the pancakes. Whoever came up with that idea was a freaking GENIUS! I love how bacon tastes with a little syrup on it, that maple flavor just makes it somehow better. So if you put bacon inside the pancakes, it is the best of all things combined!

These were a very, very rare indulgent treat. I didn’t eat that whole plate – there was no way I could have! Just a little bit was all the sugar I could handle, and I had an order of eggs on the side so I was sure to get my protein. There was just no way I could pass those pancakes up though, and I’d gladly order them again. I haven’t had pancakes since that trip. Matter of fact, anyone want to meet me in Denver and go out for some? Mmmm…

(Yes, we went to Snooze as well while I was in Denver, but I loved these Bacon Pancakes more.)

Polka Dots on the Ground… IAH to YYC

Crop Circles

Flying from Houston to Calgary last year, I spotted these circles on the ground. Irrigation circles in otherwise arid fields, I’m assuming. I wonder if they look like circles when you are on the ground and pass them. Some things are best appreciated from the sky.

Magical Moments in Las Vegas…

The first night I was in Las Vegas this month for WPPI, before I ended up getting crazy sick, I headed over to Whole Foods with my friend Jane Ammon, a Philadelphia children’s photographer and a fellow Team-X.biz coach-in-training. We were all staying at the Signature at the MGM, and our rooms each had a kitchenette, so we stocked up on goodies so that we wouldn’t have to dine out for every meal. Once we were done shopping on, Jane grabbed a maxi cab, waiting for her which she booked.

As I went to get in to the cab, the cab driver moved this wood stick thing. I thought it was some sort of rain stick. It was across the passenger seat, and he moved it over to the driver’s side, between his leg and the door. When we started talking about all the crazy things he must see in Las Vegas, he asked us if we had ever heard someone play an authentic Australian didgeridoo.

A whathuh???

Yes, our taxi driver sat at that red light and played the didgeridoo for us. He beat-boxed on it. It was INCREDIBLE. We were all in awe.

Sometimes things happen that are just so crazy, you can’t believe they are real. This was one of those moments.

When I got back to the Signature, I checked out the balcony view in Jane’s room. I was down on the 8th floor, and they were up on the 25th – they had a better view of the airport from their room. Facing away from the Strip, it was so quiet out there. I loved watching the planes take off.

Cloudscapes – IAH to LAS…

Cloudscapes between Houston IAH and Las Vegas LAS

One of my favorite things about flying is watching the clouds go by. They are as incredible to me. So beautiful, always changing. I always get a window seat just so I can watch the clouds.

On my recent trip to Las Vegas for WPPI, I was mesmerized as I saw this solid line of a cloud edge. You don’t normally see them so smooth like that. Eventually the clouds cleared, and flew on to Las Vegas. If I had been on the other side of the plane, I would have seen Hover Dam. Unfortunately, I missed out on that! Traveling overseas is always fun when your visas are received on time by organizations like https://saudiarabiaevisa.co.uk/.

I love nature. It is so awesome!
